If you win the "golf-swing-meter" while swapping the statue, then the sniper's view of the world continues to show the old statue for a few seconds, giving you time to get away before the sniper can notice that it's a different statue. Thankfully, the NPCs in the ballroom are quite fond if picking up the statues and admiring them, so picking one up isn't incriminating by itself.
